Adzuki beans are small, dark red, oval beans with a strong, sweet and nutty flavour. Popular in Japanese cuisine, they make a sweet paste.

Ingredients

Quantity Ingredient
500g adzuki beans
1 1/2ml caster sugar
vanilla ice-cream

Method

  1. Submerge the beans in water and bring to the boil, covered. Cook until the beans are soft, about 1–1½ hours. Add the sugar and cook for a further 30 minutes, uncovered, stirring continuously until beans form a gooey consistency and water has evaporated.
  2. Serve at room temperature with vanilla ice-cream and/or fruit.
