Stir-fried chicken thighs with broccolini

This is an easy stir-fry to learn and if you use a non-stick wok you’ll be able to use less cooking oil. The broccolini can be replaced with broccoli, snow peas or sugar snap peas, as you like.

Ingredients

Quantity Ingredient
3 chicken thighs, boned and skin removed
1/2 tablespoon soy sauce
1/2 tablespoon dry sherry or chinese cooking wine
1 teaspoon cornflour
1/2 teaspoon curry powder
1 bunch broccolini, trimmed
2 tablespoons vegetable oil
1/2 garlic clove, crushed
2 thin slices ginger
1/4 red capsicum, seeded and diced
1 cup bean shoots, roots trimmed
1 tablespoon pumpkin seeds or other seeds of your choice, (optional)

Method

  1. Cut each chicken thigh into 5 thin slices.
  2. Mix the soy sauce, sherry, cornflour and curry powder in a bowl. Add the chicken pieces and toss gently in the marinade. Set aside for 10 minutes.
  3. Slice the broccolini diagonally into bite-sized pieces. Place in a bowl and cover with boiling water. Drain after 3 minutes.
  4. Heat half the oil in a wok. When hot, add the garlic, ginger and chicken pieces and stir-fry for about 7 minutes, or until the chicken is almost cooked. Tip the chicken pieces into a bowl.
  5. Add the remaining oil to the wok. When hot, add the capsicum and stir-fry for 3 minutes. Add the broccolini and stir-fry for 2 minutes. Add the bean shoots and stir-fry for 20 seconds. Return the chicken to the wok, add the pumpkin seeds (if using), toss well so that everything is warmed through and serve straight away.
