That famous chocolate orange in a box started life almost a century ago as an apple! Thank goodness it was changed to an orange; a much better combination. Do use orange chocolate in the cake, if you want; it works well here, though I prefer the orange zest. The cake is so moist that it keeps well for a few days and freezes brilliantly. Just make a batch, cut into cubes and drizzle with chocolate as you need. You can buy liquid glucose in the baking department of supermarkets.

For the cake

1 Box of chocolates, cake only, (see note)

For the glaze

100g unsalted butter, cubed
2 tablespoons liquid glucose
180g 70% cocoa solids chocolate
or 180g 55–70% cocoa solids orange-flavoured chocolate

Method

  1. When the cake is cold, place it in the fridge for one hour to firm up. Remove from the fridge, turn it upside down and cut into 25 (5 x 5 cm) neat squares. Place on a wire rack, with a sheet of baking parchment underneath to catch the drips.
  2. Melt the chocolate for the glaze in a small heatproof bowl set over gently simmering water, making sure the bowl does not touch the water. Once the chocolate has melted, stir in the butter and liquid glucose until you have a beautiful shiny chocolate glaze. Allow it to cool slightly. Spread it over the squares with a palette knife and encourage it to drizzle down the sides. Allow to set for half an hour or so and decorate as you wish.

For the decoration … a few ideas:

  • Candles; 1 sheet gold leaf or small pot of gold leaf pieces; curls of orange zest; tiny gold dragees; chocolate leaves; milk chocolate curls; Caramel Hazelnut Wisps.

Note:

  • Make the cake either with the finely grated zest of 3 large oranges added, or with 55–70% cocoa solids orange-flavoured chocolate (such as Green & Black’s Maya Gold), rather than plain chocolate.
