Chargrilled chicken, pepper and herb couscous salad

What to do with any leftover chicken. In fact it's almost worth grilling more than you need just so that you can make it.

Ingredients

Quantity Ingredient
5 tablespoons olive oil
2 tablespoons pinenuts, (optional)
1 onion, peeled and finely chopped
1 garlic clove, peeled and crushed
250g instant couscous
400ml vegetable stock
1-1 1/2 tablespoon wine vinegar or lemon juice
1 chargrilled chicken breast
or 2 barbecued legs, cut into strips
leftover grilled peppers, courgettes, tomatoes and aubergines, diced
3 heaped tablespoons chopped fresh herbs, such as fresh basil, tarragon, chervil parsley or coriander
salt
pepper

Method

  1. Heat 2 tablespoons of the oil in a small frying pan, add the pinenuts and fry for 30 seconds or so until lightly browned. Remove from the pan with a slotted spoon and set aside. Add the onion, stir, turn the heat up a little and fry until the edges of the onion start turning brown (about 5-6 minutes). Meanwhile make up the couscous, following the instructions on the pack but do not add any oil. When the onions are brown, take them off the heat and stir in the garlic, then tip them and the pinenuts into the couscous, fork through and leave to cool. Make the dressing by whisking the vinegar or lemon juice with the remaining oil and season to taste with salt and pepper. When the couscous has cooled down add the chopped up chicken and vegetables, the dressing and herbs and toss together. Serve straightaway.

Variations

  • You could also add some roasted corn kernels to the recipe.

Leftovers

  • If you've already made a couscous salad to go with your barbecue you could simply mix in the chopped leftover chicken and vegetables, a splash of dressing and a few herbs.

Thirfty tip

  • If you have some leftover green pesto you could add that to the dressing.
