Two vegetable minestrone

A make-do-and-mend recipe from fridge leftovers which proves minestrone doesn't have to have a zillion different veg.

Ingredients

Quantity Ingredient
2 tablespoons olive oil, extra for serving
75g chopped streaky bacon, lardons or pancetta
a large leek or some outer leek leaves, washed and sliced
1/2 bunch celery, preferably with leaves, sliced
A pinch dried thyme or oregano
1 x 400g tin of flageolet or cannellini beans, drained and rinsed
600ml stock made with 2 tsp vegetable bouillon powder
2 fresh tomatoes, skinned and roughly chopped
or 400g can tomatoes
or 2-3 tablespoons passata
grated parmesan or grana padano, (optional)

Method

  1. Heat the oil, add the bacon pieces and fry for a few minutes until beginning to colour, then add the chopped leeks and celery and a pinch of dried thyme and cook them slowly with the lid on the pan for about 7 or 8 minutes. Add the beans, stock and chopped tomatoes and cook for another 7-8 minutes until the vegetables are tender. Add the chopped tomatoes and celery leaves if you have some and simmer for another б minutes. Season to taste with plenty of freshly ground pepper and serve with a drizzle of olive oil and/or some grated Parmesan or Grana Padano.

Variations

  • You can substitute an onion for the leek, and courgettes for the celery. You could stir in a handful of spinach or other greens at the end instead of celery leaves. You could use chopped Serrano ham instead of bacon. You could add some pasta shapes to it instead of beans.

Thrifty tip

  • If you have some Parmesan rind left over add that to the soup.
