Mackerel, olive and orange salad

Tinned mackerel is much underrated but needs some punchy flavours to counteract its slight oiliness.

Ingredients

Quantity Ingredient
2 oranges
2 small or 1 large head of chicory
10-12 pitted green or black olives with herbs, chopped
2 tablespoons olive oil
1 x 200g tin mackerel, drained and flaked
2 tablespoons chopped parsley
salt
pepper

Method

  1. Cut one of the orages in half and juice it.
  2. Remove as much rind and pith from the remaining orange as possible – an easy way to do this is to score round the skin of the orange as if dividing it into quarters, put it in a bowl, pour boiling water over it and leave it for a minute or two. The pith will then come away cleanly. Then cut into chunks.
  3. Trim and slice the chicory into rounds.
  4. Put the orange and chicory into a bowl with the chopped pitted olives and orange juice.
  5. Cut one of the oranges in half and juice it. Remove as much rind and pith from the remaining orange as possible* and cut into chunks. Trim and slice the chicory into rounds. Put the orange and chicory into a bowl with the chopped pitted olives and orange juice. Add 2 tablespoons of oil from the olive jar if it is decent oil. If not add two tablespoons of olive oil and toss together. Add the flaked mackerel and parsley and carefully mix without breaking up the fish too much. Season to taste with salt and black pepper and mix again.

Variations

  • You could make this with tuna rather than mackerel or substitute a bunch of watercress for the chicory.

Thrifty tip

  • For some weird reason chicory is about four times as expensive in the UK as it is in France so bring some back with you if you're on a day trip. (Its season is winter to spring).
