Next to roast chicken, possibly the most perfect children's meal ever. I've not come across one that doesn't love it (unless they're vegetarian, of course). Or any adult come to that. Pure comfort food.

Ingredients

Quantity Ingredient
2 skinless, boneless chicken breasts, finely sliced into escalopes
30g plain flour, seasoned with salt and pepper
1 large egg, lightly beaten with I tbsp milk
50-75g natural dried breadcrumbs
6-7 tablespoons light olive oil
50g butter
1 lemon, quartered
watercress, for garnish (optional)

Method

  1. Place the chicken escalopes between two sheets of greaseproof paper and beat out flat with a rolling pin. Put the flour, egg and dried breadcrumbs in 3 separate shallow bowls. Dip each escalope in seasoned flour, then in the beaten egg mixture shaking off any excess then finally in the dried breadcrumbs, making sure it is evenly coated. Heat a frying pan, add 2 tablespoons of the oil then, when that has heated, about 20g of butter. Once the butter has melted lay the fillets in the pan and fry briefly for about a minute each side until nicely browned. Set aside on a warm plate. Repeat with the remaining escalopes adding more oil and butter as you need it. For kids you can serve the escalopes pretty much as they are with a lemon wedge, a simple salad and some new potatoes or spaghetti with a simple tomato sauce. For more adult tastes accompany them Sound-of-Music style with some buttered noodles (schnitzel with noodles - remember?).

Variations

  • Lots. You could make these with turkey, pork or veal escalopes. You could top them with salsa verde or with chopped capers, anchovies and an egg (in which case it would become chicken Holstein) or chopped fresh tomato and basil, bruschetta-style. They're good with grated courgettes too.

Leftovers

  • Fatally delicious cold. Good lunchbox fare.

Thirfty tip

  • Buy your dried breadcrumbs from an Italian deli - Italians use them all the time so they're cheap and freshly made.
