While I reckon ciabatta is normally a bit pricey, it's perfect for crostini bases.

Ingredients

Quantity Ingredient
2 ready-to-bake ciabatta loaves
olive oil spray
or 4-6 tablespoons light olive oil
2 baking trays

Method

  1. Preheat the oven to 180°C. Cut the ciabatta on the slant into fairly thin slices. Spray both sides with olive oil or pour the olive oil on the baking trays and dip the slices of ciabatta in it. Bake for 15 minutes, turning the slices half way through. Repeat with any remaining ciabatta slices. Cool then store the toasts in an airtight tin.

Variations

  • You could add dill rather than tarragon.

Thrifty tip

  • Buy mushrooms loose rather than pre-packed.
