Method

  1. Slice stale bread thinly and bake as described under croutons above but without spraying them with oil first. Cool then whizz in a food processor or blender, taking care not to reduce them to powder. (You can also buy them dried and ready-made from Italian delis). You can use them for coating chicken, veal or turkey escalopes or Scotch eggs or as an alternative to fresh breadcrumbs in a gratin topping.
