Method

  1. To make egg-fried rice for one, break 1 large or 2 medium eggs into a bowl and beat them lightly. Heat a wok or large frying pan over a moderate heat and pour in 2 tablespoons of oil. Tip in 2-3 finely sliced spring onions and stir-fry for a minute or two until beginning to soften. Add the beaten eggs and stir until almost all the liquid egg has disappeared (a few seconds). Add a portion of cooked, chilled basmati rice and a handful of thawed frozen peas and stir-fry for a couple of minutes until hot through. Sprinkle over about 1 tablespoon of soy sauce and mix in well.
