Method

  1. Although this is a good way to use up leftover ciabatta or baguette it is almost worth starting from scratch just to make these incredibly useful bases for pre-dinner nibbles. Pre-heat the oven to 180°C. Cut the ciabatta or baguette into thin slices, about 1 cm thick. Spray both sides with an olive oil spray or pour some olive oil on a baking tray and dip the slices of bread in it. Bake for 16 minutes, turning the slices half way through. Repeat with any remaining bread slices. Cool, then store the crostini in an airtight tin for up to a week.
