Method

  1. Quarter, peel and core 3 large Bramley or other cooking apples (about 700g) and slice thickly into a large saucepan. Sprinkle with 2-3 tablespoons of unrefined caster sugar and 1/4 teaspoon cinnamon and add 3 tablespoons of water. Put a lid on the pan, put over a moderate heat and cook for about 10-15 minutes until the apples have broken down. Stir with a wooden spoon and cool. You could replace some of the apple with other fruit such as blackberries, raspberries or frozen mixed berries, in which case you may want to leave out the cinnamon.
