Ingredients

Quantity Ingredient
200g long-grain rice
750ml milk, plus 2 tablespoons extra
395g tinned condensed milk
20g butter
2 strips lime zest
1/2 teaspoon ground cinnamon, plus extra for sprinkling
2 large egg yolks

Method

  1. Put the rice and 500 ml water in a heavy-based saucepan and bring to the boil. Reduce the heat to low, cover and gently simmer for 10 minutes. Remove from the heat and set aside with the lid on for 5 minutes, or until all of the water has been absorbed and the rice is cooked.
  2. Stir 750 ml of the milk, the condensed milk, butter, lime zest and cinnamon into the rice. Bring to the boil over a medium heat. Reduce the heat and simmer, stirring occasionally, for 10–15 minutes, or until the mixture is creamy and most of the liquid has been absorbed.
  3. Combine the egg yolks with the extra milk in a small bowl. Stir into the rice mixture and cook, stirring constantly, for a further 2 minutes. Discard the lime zest.
  4. Transfer the rice to a large dish or individual serving dishes and dust with the cinnamon. Set aside to cool slightly, then serve warm or chilled.
