King prawn, bacon & garlic

This is a posh toastie that gives a hit of smoky saltiness along with umami sweetness. Served with Seasonal Slaw, this is a fantastic meal.

Ingredients

Quantity Ingredient
2 slices smoked streaky bacon
olive oil, for frying
5 fresh or ready-cooked king prawns
1 tablespoon mayonnaise
2 thick slices white farmhouse bread
handful rocket
1 tablespoon butter, at room temperature
1 garlic clove, peeled

Method

  1. Cook the bacon either in a frying pan or under the grill until crispy and set aside.
  2. Heat a little oil in a frying pan over a medium-high heat and fry the raw prawns for 3–6 minutes until they are pink and cooked through, or fry the cooked prawns until they are hot.
  3. Spread the mayonnaise on one slice of the bread. Add the crispy bacon, then top with the prawns and rocket. Place the other slice of bread on top, then spread half of the butter on top of the sandwich. Carefully flip it over and spread the rest of the butter on the other side.
  4. Heat a clean frying pan until medium-hot and put the sandwich in the pan. Fry for 2–3 minutes on each side until crisp and golden. Alternatively, cook the sandwich in a toasted sandwich maker or panini press.
  5. Remove the toastie from the pan or machine and lightly rub the garlic clove all over it. Cut in half to serve.
