This breakfast is ever so simple, yet ever so delicious. It’s the breakfast I eat when alone, or my lunch when I feel like something quick and tasty. I like to sprinkle a pinch of paprika over it in the morning, but if I am eating it for lunch I sometimes pour over sesame oil and soy sauce and slice up a few chillies. Sourdough is great with it, but any toasted flat bread or pitta is rather good too.

Ingredients

Quantity Ingredient
1 avocado
1 lime
4 slices sourdough bread
large pinch salt
pinch paprika

Method

  1. Slice the avocado in half and remove the stone. Using a dessertspoon, scoop the flesh out of each half and put it in a bowl. Squeeze over the juice from the lime and mash together with the back of a fork. I like to keep the avocado a little chunky so that it has some bite. Once you are happy with the texture, toast your sourdough. I like to do this on the hob so you get a few charred parts for a smoky taste. Once toasted, pop the sourdough on to a plate, then spread with the avocado, sprinkle with salt and paprika, and take a large mouthful.
