I was toying with the idea of putting my version of an English fry-up in this book, but I felt that because everyone has their own favourite fry-up ingredients, I wouldn’t be able to tempt you to try another way! Instead I’ve included this recipe, where you can change the toppings to suit your tastes but serve them in a slightly different way.

Ingredients

100g smoked streaky bacon or smoked pancetta, cut into 1 cm cubes
6 cherry tomatoes, halved and seeds removed
2 field mushrooms, sliced
1 x 320 g roll ready-made butter puff pastry
4 sun-dried tomatoes, chopped
4 eggs, boiled for 6 minutes in boiling water and halved
olive oil
2 slices white bread
handful parsley, chopped
salt
freshly ground black pepper

Method

  1. Turn the grill on to high. Spread the bacon, tomatoes and mushrooms evenly on to a baking tray and grill for 3–4 minutes, turning once, then take them out and set aside.
  2. Preheat the oven to 200°C and line another baking tray with baking parchment. Roll out the pastry to around 350 mm × 225 mm, and lay it on the parchment. Using a fork, prick the pastry all over to prevent it from rising when it cooks. Bake in the oven for 5 minutes then remove.
  3. Arrange the sun-dried tomatoes evenly over the pastry. Then add the bacon, tomatoes and mushrooms and top with the boiled eggs. Brush all over with a little oil and bake for a further 8–10 minutes, until the pastry is golden brown.
  4. While the tart is cooking, whizz the white bread in a food processor, add the chopped parsley and season. Crisp the mixture up in a frying pan with a teaspoon of oil.
  5. Serve with the parsley crumbs sprinkled over the top and your choice of sauces.
