Griddled grapefruit with pistachios and yoghurt

If you are in a hurry or fancy something light, have a go at this warm citrus breakfast. It’s very simple and very pleasing. Try adding other toasted nuts if you prefer.

Ingredients

Quantity Ingredient
2 pink grapefruits
2 tablespoons orange-blossom honey
2 pinches cinnamon
1 tablespoon boiling water
handful toasted pistachio nuts
4 dessertspoons natural yoghurt

Method

  1. Turn on the grill. Slice the grapefruits in half and pat the flesh dry with kitchen towel. In a small bowl, dissolve the honey with the cinnamon and boiling water.
  2. Line a baking tray with parchment paper. Arrange the grapefruit cut side up and drizzle with the honey mixture. Grill for 8–10 minutes until caramelised on top, but keep an eye on them to make sure they don’t burn.
  3. Serve with a dollop of yoghurt and sprinkle of pistachios.
