This is a popular Indian tea with a delicious array of spices. This tea makes you feel re-energised and is delicious for dipping biscuits in to!

Ingredients

Quantity Ingredient
500ml milk
3 teaspoons sugar
1 thumb-sized piece ginger, peeled and grated
3 cardamom pods, seeds only
3 tablespoons chai tea leaves

Method

  1. Put the milk, sugar, ginger and cardamom seeds into a saucepan over a low heat and slowly bring it up to the boil. Continue to boil for a good 20 minutes, stirring occasionally, keeping an eye on it to make sure it doesn’t burn – turn down the heat if it looks like it might.
  2. Add the tea leaves and stir them through the milk – you may find that the milk forms a skin, but just stir the tea leaves around to get rid of it. Boil for about 2–5 minutes more to infuse the milk with the tea leaves; you want a light tan colour.
  3. Strain the tea into a jug and then pour this into 4 mugs or cups, whichever you prefer, and serve. I’m quite partial to a drinking tea from a mug, especially in the winter when you can wrap you cold hands around it. Try dunking in a bombolone. A soft, fluffy bun can be nice too.
