Lizzy drank this at Bar Astor in Ipanema on her first night in Rio, and instantly knew she was in Brasil. When we got home we were determined to recreate it, and here’s the result: the flavour of hot summer nights.

Ingredients

Quantity Ingredient
5 small chunks fresh, ripe watermelon, skin removed, plus extra to garnish
35ml vodka
15ml cloudy apple juice
10ml passion fruit liqueur
handful ice cubes
10ml watermelon syrup, plus extra for drizzling
or 10ml simple sugar syrup, plus extra for drizzling

Method

  1. Place a martini glass in the freezer for 20 minutes to get it well chilled and frosty. Muddle the watermelon in the bottom of a cocktail shaker with a cocktail muddler or the end of a small rolling pin, leaving in any pips. Add the remaining ingredients with a handful of ice cubes, then cover the cocktail shaker and shake vigorously for a few seconds. Double-strain it into the chilled glass, making sure there are no pips.
  2. Garnish with a slice of watermelon or 3 small watermelon balls on a cocktail stick. If you have watermelon syrup to hand, drizzle a little over the watermelon garnish, then serve immediately.
