This Anglo-Brasilian dish combines Brasil’s favourite cut of meat with Britain’s favourite barbecue dish. If you can’t find picanha (cap of rump), or would prefer something lighter, you can substitute the same amount of good-quality minced beef. Potato matchsticks, or ‘chipsticks’, are popular in Brasil. You can find matchstick potatoes in larger supermarkets (they’re sometimes called potato sticks or straw potatoes) or in specialist Latin American stores.

Ingredients

500g picanha, hand minced
30g dried breadcrumbs
3-4 tablespoons Chilli and cumin marinade
olive oil, for brushing
4 brioche burger buns
4 teaspoons Chilli mayonnaise
3 plum tomatoes, sliced
4 teaspoons Chimichurri marinade
4-5 tablespoons Black beans
handful matchstick potatoes, (optional)
sea salt
freshly ground black pepper

Method

  1. First, make the burgers. Put the beef mince and breadcrumbs in a large bowl, add the chilli and cumin marinade, season with salt and pepper and mix well. Fry a teaspoon to taste it and check the seasoning; adjust if necessary. Divide the mince into 4 portions and moisten your hands. Shape each portion into a flat burger patty. Cover and chill the patties for at least 30 minutes to firm up.
  2. Light the barbecue and let the flames die down before starting to cook. If cooking indoors, heat a griddle pan until very hot. If using a griddle pan, reduce the heat to medium, then lightly oil the patties and cook for 4–6 minutes on each side, until cooked to medium well. If using the barbecue, you may need to move them to a cooler section once browned. Remove and leave to rest for a few minutes.
  3. Meanwhile, slice and toast the burger buns and warm up the black beans in a pan. To assemble, put the bottom halves of the buns on 4 serving plates, then spread the top halves with chilli mayonnaise. Arrange 3 tomato slices on each bun base and place a burger on top. Spoon over a little chimichurri marinade, followed by a tablespoon of black beans. Sprinkle the beans with potato matchsticks, if using, then add the burger bun tops. Serve immediately.
