Layered smoothies are not only pretty but also more fun to drink since the flavour changes as you sip. It is also the only way to combine green vegetables with red berries without ending up with a nasty brown color. One of the unexpectedly best smoothie bars I have visited was on a beach just north of Barcelona. From a distance it looked like as if the dancing bartenders were shaking up cocktails, but instead they were mixing the most amazing juices and smoothies with fresh fruit, various superfoods and nut milks. — Luise

Ingredients

Quantity Ingredient
1 ripe mango, peeled and flesh cut off stone, discarded
1/2 lemon, juiced
2.5cm fresh ginger
or 1/2 teaspoon ground ginger
2 handfuls leafy greens of your choice
2 tablespoons hemp seeds
2 teaspoons barleygrass powder, (optional)
or 2 teaspoons grass powder of your choice, (optional)
250ml natural coconut water
or 250ml unsweetened plant milk
1 large handful ice cubes
200g fresh or thawed frozen raspberries, crushed

Method

  1. Place all the ingredients except the raspberries in a high-speed blender and mix until smooth and creamy. Taste and adjust to your preference. Spoon the raspberries into 2 jars or glasses, pour the green smoothie over and serve with a spoon.

Tip

  • Start with 1 teaspoon barleygrass powder per person and work your way up to 1 tablespoon.
