This is the kind of thing we make in the middle of the summer when we crave dessert but don’t feel like pulling out any mixers or turning on the oven. It is almost too simple and perfect for summer parties. It features two of our favourite summer fruits on a bed of creamy lemon and vanilla mascarpone and the simplest raw crumble you’ll ever make. The fruit is macerated in lemon juice and honey, which increases the flavour and brings out some of the fruit juices. If strawberries and peaches are not in season, use other seasonal fruit.

16 fresh strawberries, tops removed
2 ripe peaches, stones removed
1 tablespoon runny honey, or pure maple syrup
1/2 lemon, juiced

Base

75g almonds
8 soft dates, pitted
A pinch flaky sea salt

Filling

250g mascarpone
1-2 tablespoons runny honey, or pure maple syrup
1 unwaxed lemon, zested
1/2 lemon, juiced
1/2 teaspoon ground vanilla
or 2 teaspoons vanilla extract

To serve

or mint leaves
elderflower, (optional)
or lavender petals, (optional)

Method

  1. To prepare the topping, cut the fruit into bite-sized pieces, transfer to a medium-sized mixing bowl, drizzle over the honey or syrup and lemon juice and toss until well coated. Set aside for about 15 minutes to macerate.
  2. Meanwhile, prepare the base. Roughly chop the almonds and mash the dates with a fork. Transfer to a medium-sized mixing bowl. Add the salt and, using your hands, rub the dates into the almonds until combined. Set aside while you prepare the filling.
  3. Place the mascarpone, honey or syrup, lemon zest and juice and vanilla in a medium-sized mixing bowl and mix until combined.
  4. To assemble, crumble the almond and date mixture into the base of four jars, dollop the mascarpone filling on top and spoon over the fruit.
  5. Serve topped with a sprinkling of lemon balm or mint, and elderflower or lavender petals (if you wish).

Tips:

  • For a nut-free alternative, replace the almonds with sunflower seeds or pumpkin seeds.

    For a lighter version, replace the mascarpone with regular yoghurt.

    For a vegan alternative, replace the mascarpone with coconut yoghurt.

    If you can’t find soft dates, soak dried dates in hot water for 20 minutes.
