Ingredients

1 litre water
350g sugar
5 limes, zested and juiced
green food colouring, (optional)

Method

  1. Place the water and the sugar in a deep saucepan. Bring to the boil over a medium heat, stirring to dissolve the sugar. Bring the temperature to just over 100°C on a candy thermometer so it forms a syrup. Remove from the heat and allow to cool completely.
  2. Add the lime zest, juice and food colouring, if using, to the cooled syrup, mixing until well combined.
  3. For best results, use an ice-cream maker: Pour the mixture into a bowl and cover tightly with foil. Place in the freezer for around 1 hour or until quite cold but not yet freezing.
  4. Place the mixture in your ice-cream maker and follow the manufacturer‘s instructions.
  5. If you don‘t have an ice-cream maker, pour the mixture into a tray and place in the freezer for at least 4 hours. Transfer to a bowl and, using a hand-held blender, blend the semi-frozen sorbet for 1–2 minutes.
  6. Pour the mixture back into the freezer tray and freeze for another 2 hours. Repeat the process 2–3 more times or until the frozen mixture has reached sorbet consistency. Freeze overnight.
