Ingredients

Quantity Ingredient
250ml water
4 green chillies, such as jalapeños
1/4 white onion, roughly chopped
200g fresh or tinned peeled tomatillos
1/2 bunch coriander
1/2 lime, juiced

Method

  1. In a small saucepan over a medium heat, combine half the water, the chillies, onion and tomatillos. Bring to the boil and then turn off the heat. Allow to cool slightly.
  2. Transfer the mixture to a blender along with the remaining ingredients and process until the mixture is smooth.
  3. Store in the refrigerator for up to 3 weeks.
