Ingredients

Quantity Ingredient
500g small cooked prawns
250g fresh oysters
250g cooked crabmeat
2 limes, juiced
1 tomato, chopped
125ml olive oil
125ml tomato juice
125ml tomato sauce
1/2 bunch bulb spring onions, finely chopped
1/2 bunch coriander leaves, roughly chopped, plus extra for garnish
60ml chipotle sauce
2 avocados, cut into cubes
lime cheeks, to serve
crackers, to serve

Method

  1. Mix all the seafood in a large bowl.
  2. Add the remaining ingredients, except the avocado, extra coriander, lime and crackers, and stir gently until combined. Season to taste.
  3. Spoon the seafood mix into 6 tall cocktail glasses, topping each glass with some avocado and the extra coriander leaves.
  4. Serve with the lime cheeks and crackers.
