Raw cashew paste is used in curries – both authentic and BIR – to thicken the sauce and to add flavour.

It is most commonly used in BIR chicken korma and lamb rogan josh but you could really add it to any curry. Why not? It’s good.

Method

  1. Soak raw cashews (quantity as needed) in cold water for about 30 minutes. Drain and place the cashews in a spice grinder or blender. Add just enough fresh water to blend to a paste. That’s it. You’re done.
  2. Transfer to a bowl and store in the fridge for up to 3 days.
