Tamarind chutney simply has to be on the table when my wife and I plan a curry party. It’s sweet, sour, savoury and spicy, and also has a nice crunch to it. What more could you ask for in a chutney?

Ingredients

Quantity Ingredient
1-2 tablespoons tamarind concentrate
2 tablespoons water
3 tablespoons sugar
4 tablespoons tomato ketchup
1 lemon, juiced
3 fresh green chillies, finely chopped
1/2 onion, finely chopped
3 spring onions, finely chopped
4 tablespoons finely chopped coriander
1 large carrot, grated
1 teaspoon Madras curry powder
salt, to taste

Method

  1. Put all the ingredients, with salt to taste, into a small bowl and mix well. Refrigerate for at least 1 hour before serving.
