This onion chutney is about as easy as it gets. It’s too simple for words, but then who said that delicious Indian dinners had to be complicated? Find yourself a nice, fresh red onion and it will do all the work for you. This is a very popular accompaniment, often served with papadams or piled high on kebabs and naans. It is essential to serve it very cold.

Ingredients

Quantity Ingredient
1 large red onion, halved and finely sliced
pinch salt
pinch sugar
1 lemon, juiced
1 fresh green chilli, finely chopped

Method

  1. Put the sliced onion in a bowl of cold water with ice cubes added, and put in the fridge for about an hour. Once good and cold, drain and pat the slices dry with a clean cloth.
  2. Season with salt, and sugar if using, and squeeze the lemon juice over the top. For a spicier chutney, mix in the finely chopped chilli. Serve very cold right from the fridge.
