Coriander, garlic and chilli raita

My favourite raita. Nothing more to be said.

Ingredients

Quantity Ingredient
bunch fresh coriander, leaves only
1-2 garlic cloves, to taste
2 tablespoons lime juice
2 fresh green chillies, or to taste, roughly chopped
375g plain yoghurt
salt

Method

  1. In a spice grinder or small food processor, blend the coriander leaves, garlic, lime juice and chillies to a paste. You can also use a pestle and mortar to do this, with a little more work.
  2. Whisk the yoghurt with a fork until creamy smooth, then stir in the coriander paste. Season with salt to taste and chill in the fridge for about 30 minutes before serving.
