Date slices are sweet, gooey, incredibly addictive, and made my way are actually pretty good for you, providing a great general energy boost.

Ingredients

Quantity Ingredient
150g coconut oil, plus extra for greasing
200g pitted dates, chopped
3 tablespoons honey
75g porridge oats
200g wholemeal flour
3 tablespoons mixed seeds

Method

  1. Preheat the oven to 150°C and grease a 20 cm baking tin with coconut oil. Place the dates in a saucepan with 4 tablespoons water. Place the pan over a low heat, cover and cook the dates for a minute or two, until they form a gooey paste.
  2. In another pan, melt the honey and coconut oil.
  3. In a bowl, mix together the oats, flour and mixed seeds. Pour in the melted honey and coconut mixture and stir well to form a dough.
  4. Spoon half the dough into a greased baking tin, pushing down firmly. Top with the date mixture, and then spread the remaining dough over the date mixture.
  5. Bake in the oven for around 30 minutes, or until golden brown. Allow to cool completely before cutting into squares.
