Sweet potato, red lentil and white bean miso stew

This dish is fantastically filling. Sweet, warming and hearty, it would make a perfect winter meal with some steamed greens. Miso is fermented soy bean paste. It is super-nutritious and tastes amazing, too. It is available in most supermarkets and health food shops.

Ingredients

Quantity Ingredient
1 large red onion, finely chopped
2 garlic cloves, finely chopped
sea salt
freshly ground black pepper
1 tablespoon olive oil
200g red lentils
1 medium sweet potato, skin-on, chopped
1 heaped tablespoon miso paste
400g canned butter beans, drained

Method

  1. Sauté the onion and garlic, along with a pinch of sea salt, in the oil until the onion is soft.
  2. Add the lentils and sweet potato and enough water to almost cover the contents of the pan. Bring to a simmer. Add the miso paste and stir well until it has dissolved.
  3. Continue simmering until the sweet potato has softened and the lentils are soft and semi-broken down, creating a thick stew. Add the butter beans and mix well.
  4. Season to taste if required, before serving with wilted greens.

  • Best for constipation.
