As we saw in the introduction, feeding the good bacteria in the gut is an important part of long-term management of bloating, as well as of improving digestive function overall. The inulin in leeks feeds this good bacteria, enhancing its growth.

Ingredients

Quantity Ingredient
1 small leek, sliced
2 teaspoons olive oil
sea salt
3 large eggs
50g feta cheese

Method

  1. Preheat the grill. In an ovenproof omelette pan, sauté the leek in the olive oil, along with a pinch of sea salt, until the leek softens.
  2. Whisk the eggs in a bowl, then pour them over the leeks. Allow to cook over a medium heat for three or four minutes, until the underside and outer edge have cooked, but most of the top and centre are still raw.
  3. Crumble over the feta, then place the pan under the grill for another three minutes or so (keep your eye on it) until the frittata is fully cooked.

  • Best for bloating.
