Herbed salmon burgers with avocado salsa and spinach-strawberry balsamic salad

This may sound like a really peculiar combination, but I stumbled on it quite by accident… well, using up leftovers from the fridge to be precise. Give it a try and you will see what a delight it is.

Ingredients

Quantity Ingredient
1/2 avocado, peeled
3 plum tomatoes
1/2 red chilli
sea salt
freshly ground black pepper
2 skinless salmon fillets, chopped
1 garlic clove, finely chopped
1 tablespoon chopped parsley leaves
1 tablespoon chopped coriander leaves
1 tablespoon olive oil, plus 2 teaspoon extra
1 teaspoon balsamic vinegar
handful baby spinach
6-7 strawberries, halved

Method

  1. Make the salsa by chopping the avocado, plum tomatoes and chilli. Combine these ingredients with a little black pepper.
  2. Place the salmon fillets, garlic, herbs and a pinch of sea salt into a food processor and process into a smooth minced texture.
  3. Remove the mixture, divide into two and form each into a burger patty shape.
  4. Gently fry these burgers for about five minutes on each side in the 2 teaspoons of olive oil, until turning a golden colour.
  5. Mix the remaining 1 tablespoon of olive oil and the balsamic vinegar and whisk into a dressing.
  6. Place the spinach on the plate, dot the strawberries over the leaves and dress with the balsamic dressing.
  7. Place the salmon burgers on top, then top the burgers with the avocado salsa.
