I just adore a Greek salad. This twist on a classic adds ingredients that can help your body ease bloating using its own in-built mechanisms. Artichokes, rocket and olives all aid in the production and release of bile. Bile is vital because it aids fat digestion and (importantly) is the body’s own natural laxative. Constipation and impaired fat digestion can both cause or exacerbate bloating.

Ingredients

For the dressing

Quantity Ingredient
2 tablespoons olive oil
2 teaspoons balsamic vinegar
1/2 teaspoon dried oregano
sea salt
freshly ground black pepper

For the salad

Quantity Ingredient
handful mixed salad leaves
2 handfuls rocket leaves
2 tablespoons pitted kalamata olives
200g cooked artichoke hearts
1/4 cucumber, sliced
100g feta cheese

Method

  1. Mix all the dressing ingredients well and whisk them to create an emulsion.
  2. Combine the leaves, olives, artichoke hearts, cucumber and dressing and toss well. Arrange on a serving plate and crumble the feta on top.

  • Best for bloating.
