Figs in flapjacks just give a real texture treat. From chewy, to crunchy, to sticky. A great combination.

Ingredients

Quantity Ingredient
140g soft dried figs, chopped
80g coconut oil
6 tablespoons honey
300g porridge oats
50g goji berries
50g pitted dates, chopped
75g mixed seeds

Method

  1. Preheat the oven to 190°C. Line a 23 cm baking tin with baking parchment.
  2. Place the figs in a saucepan with about 150 ml of water and simmer until the water has reduced by half. Transfer to a food processor and blend into a paste.
  3. Melt the coconut oil and honey together in a pan. Add the fig paste and combine well.
  4. Add the fig mixture to the remaining ingredients in a bowl and mix well.
  5. Transfer the mixture to the prepared baking tin and bake for about 25 minutes, until they begin to turn golden. Allow to cool completely in the tin before cutting into six to eight squares.

  • Best for constipation.
