Chia seeds seem to be quite the popular ingredient at the moment. While it is fair to say that some of the claims people are making for them are really rather daft, they are an indisputably wonderful source of soluble fibre.

Ingredients

Quantity Ingredient
250g pitted dates
250g raw almonds
3 teaspoons chia seeds
desiccated coconut, to coat

Method

  1. Place the dates, most of the almonds and chia seeds into a food processor and blitz on the highest setting until a stiff paste forms. Add the remaining almonds and blitz briefly, so there are some big chunks of nut in the paste.
  2. Sprinkle the desiccated coconut on to a plate. Processing the ingredients at such high speed will have squeezed all of the oil from the almonds, so the paste will be very oily. Break off thumb-sized pieces of paste, roll into balls, then roll them in the coconut. Place the coated balls on a clean plate.
  3. Once all of the paste has been rolled into balls, place them into the fridge for several hours, which will make them firmer and give them a great chewy texture.
