This is a lovely comforting dish that is a little like a Chinese congee, but with the satisfying flavours of Japanese miso soup.

Ingredients

Quantity Ingredient
1 large chicken breast
75g brown rice
1 tablespoon miso paste, (any will do, but ideally brown if you have it)
2 handfuls baby spinach

Method

  1. Preheat the oven to 190°C.
  2. Place the chicken breast on a baking sheet and roast for about 30 minutes.
  3. Meanwhile, cover the rice in boiling water and simmer gently for about 20 minutes, until the rice is soft, then drain.
  4. Pour about 1½ mugs of hot water into a bowl. Add the miso paste and stir until dissolved.
  5. Add the rice to the centre of the bowl, trying to make a mound amid the soup.
  6. Place the baby spinach leaves on top so they wilt naturally. Slice the chicken breast and lay the slices on top of the spinach.
