I love quesadillas. Simple, gooey, delicious comfort food. Using wholemeal tortillas and wholesome fillings helps these to be really quite good for you, too.

Ingredients

Quantity Ingredient
200g canned mixed beans, drained and rinsed
2 tablespoons sweetcorn
1/2 small red or green chilli, finely chopped
a small bunch coriander, leaves roughly chopped
2-3 handfuls cheddar cheese, grated
sea salt
freshly ground black pepper
2 wholemeal tortillas

Method

  1. Preheat the oven to 200°C.
  2. Place the beans in a bowl and partially mash them with a fork. Add the corn, chilli, coriander and one handful of the grated Cheddar, season with salt and pepper to taste and mix well.
  3. Spread the mixture over the top of one of the tortillas and sprinkle over the remaining cheese. Place the other tortilla on top, push down to tightly sandwich the two together, then place on a baking tray and bake in the hot oven for 10–15 minutes, until the tortillas crisp up and begin to turn a golden brown.
  4. Cut into quarters to serve.
