I am very partial to a nice apple crumble. Unfortunately, many versions of this lovely pudding are overly packed with sugar, which really isn’t necessary. This version is a much healthier option.

Ingredients

Quantity Ingredient

For the filling

Quantity Ingredient
450g apples, skin-on, cored and chopped
1/4 teaspoon stevia
1 teaspoon ground cinnamon

For the crumble

Quantity Ingredient
100g wholemeal flour
87g porridge oats
1/4 teaspoon stevia
1 tablespoon mixed seeds
85g coconut oil

Method

  1. Preheat the oven to 180°C.
  2. Start with the filling. Place the apples and stevia in a saucepan with 1 tablespoon of water and simmer over a high heat for 10–12 minutes, until the apples are soft and beginning to stew. Add the cinnamon and mix well. Remove from the heat and spoon in a 23 cm ovenproof dish, or into two individual ovenproof pudding dishes.
  3. Mix the flour, oats, stevia and mixed seeds together. Melt the coconut oil and stir it into the oat mixture. Sprinkle the crumble mixture over the apples, pressing down gently.
  4. Bake in the oven for 15–20 minutes, long enough for the crumble to start to get crunchy and the apples to start bubbling away nicely.
