The flavours here are synonymous with sushi and it’s a combination I love. This simple little lunch wrap will provide you with a massive omega 3 hit, magnesium, B vitamins and selenium.

Ingredients

Quantity Ingredient
1/2 large ripe avocado
1-2 teaspoons wasabi, to taste
sea salt
1 large wholemeal tortilla wrap
4-5 slices smoked salmon
handful baby spinach
lime wedges, to serve (optional)

Method

  1. Scoop the avocado flesh into a bowl. Add the wasabi and a little sea salt and mash.
  2. If you want a warm tortilla, heat a griddle pan over a high heat. Add the tortilla and heat through, turning once with tongs, until warm and marked with griddle marks.
  3. Spread the wasabi avocado mixture across the tortilla. Place the salmon slices through the centre of the wrap. Top with the spinach and roll. Serve with lime wedges, if you like.
