Ingredients

Quantity Ingredient
225g plain flour
1/4 a nutmeg, freshly grated
100g soft brown sugar
A pinch salt
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
100g honey
150ml hot black tea

Method

  1. Preheat the oven to 160°C. Grease a 450g loaf tin and line it with greaseproof paper.
  2. Mix the flour, nutmeg, sugar, salt, baking powder and bicarbonate of soda together in a large bowl.
  3. Melt the honey in the hot tea in a separate mixing bowl. Mix well to dissolve the honey. Pour the wet mixture into the dry ingredients and mix well.
  4. Spoon the mixture into the prepared tin and bake in the oven for 35–40 minutes, until a skewer comes out clean when inserted into the centre of the cake.
  5. Remove from the tin and allow to cool before slicing.
