Honey, bay and pear ice cream

Ingredients

Quantity Ingredient
600g ripe pears, peeled, cored and chopped small
2-3 bay leaves, torn in half
150g runny honey
300ml double cream
100ml full fat milk

Method

  1. In a covered saucepan over a moderate heat, cook the pears together with the bay leaves and a splash of water (about 30ml) until they are completely soft. Remove from the heat and add the honey, stirring to melt.
  2. Remove the bay leaves and blend the pears until smooth. Chill in the fridge until cold.
  3. Stir in the cream and milk and churn in an ice-cream machine, then freeze for at least 3 hours.
  4. If you don’t have an ice cream machine, use just the cream, whipping to soft peaks and gently folding in the soft pears and honey before freezing.
