Caramelized apple and maple bread pudding

Ingredients

Quantity Ingredient
20g butter, diced
8 slices day-or-two-old stale bread, crusts removed and cut into 3cm cubes
150g brown sugar
2 large apples, peeled and diced into small pieces
4 eggs
300ml full fat milk
300ml double cream
100ml maple syrup
A pinch salt
3 teaspoons Quatre épices
double cream or yoghurt, to serve (optional)

Method

  1. Preheat the oven to 180°C. Grease a baking dish with half the butter.
  2. In a large mixing bowl, toss together the bread cubes, brown sugar and apple pieces. Transfer to the baking dish and roast in the hot oven for 15 minutes. Remove from the oven and set to one side.
  3. Using the same mixing bowl, whisk together the rest of the ingredients apart from the remaining butter. Pour over the bread/apple mixture in the baking dish and gently combine, making sure each piece of bread is soaked in the egg and milk mixture. Let it stand for 10 minutes.
  4. When the egg/milk mixture has mostly soaked into the bread, dab the remaining butter all over the bread-and- apple-soaked mix, then place the baking dish in the preheated oven and bake for 40–50 minutes, or until the centre is set and the top is nice and golden.
  5. Remove from the oven and rest for 5 minutes before serving with double cream or yoghurt.
