Proper hot chocolate, made by melting grated chocolate in hot milk, is incredible. Adding spice is no news flash – just think of your favourite speciality chocolate bar and ape those flavours. Chilli, cinnamon, ginger, cardamom and vanilla are some of my favourite spices combined with chocolate. Use dark chocolate for a richer drink, or milk chocolate if you prefer your hot chocolate to be less intense. Any which way, you want it satin smooth and piping hot. A small pinch of salt will also boost flavour.
