This is a variation on the white yeasted loaf. Sourdough behaves differently with brown or wholemeal flour, so if you’re after a brown sourdough, by all means read up elsewhere. I’ve opted to use yeast in this seeded loaf.

Ingredients

Quantity Ingredient
400g wholemeal or strong brown bread flour
100g strong white bread flour
7g sachet of dried yeast
375ml cold water
75g seeds, a combination or solo: pumpkin, sunflower, sesame or linseed
5g salt

Method

  1. Follow the method and cooking times, adding the seeds to the flour when you add the yeast and water.
