Method

  1. Windfall mangoes can be a boon and not a disappointment, even if they haven’t reached maturity on the tree. The sappiness and sourness of green mangoes can be offset by a dressing of 1 tablespoon of dark soy sauce, a pinch of salt and 1 teaspoon of sugar. Dip wedges of peeled green mango into the dressing and adjust the proportions to your taste.
