  1. Toast the glutinous rice in a dry frying pan over a medium heat for 5-6 minutes, until the rice has turned a darker colour and released a nutty odour, reminiscent of popcorn. Put the rice in the pestle and mortar and pound to a fine powder. This should last for up to 3 months.
