Vegetable curry

This classic white curry is very versatile and you can use any of your favourite vegetables.

Ingredients

Quantity Ingredient
750ml thin coconut milk
1 onion, thinly sliced
2 fresh green chillies, seeded and split lengthways
1/2 teaspoon ground turmeric
2 garlic cloves, thinly sliced
1/2 teaspoon fresh ginger, finely grated
5 cm stick cinnamon
1 pandanus leaf
1 stem lemongrass, bruised
or 2 strips lemon zest
8 curry leaves
750g mixed vegetables, sliced
salt, to taste
250ml thick coconut milk

Method

  1. Put all of the ingredients, except the sliced vegetables, salt and thick coconut milk, into a large saucepan and simmer gently, uncovered, for about 10 minutes. Add the sliced vegetables and salt and cook gently until the vegetables are just tender. Add the thick coconut milk and simmer for about 5 minutes. Serve with rice, other curries and accompaniments.
