Rice with mushrooms

This meal in a pot includes meat, vegetables and rice.

Ingredients

Quantity Ingredient
1 tablespoon vegetable oil
1 tablespoon sesame oil
2 onions, thinly sliced
100g lean steak, finely shredded
250g fresh button mushrooms, sliced
500g short-grain rice
1 teaspoon salt
2 tablespoons light soy sauce
1/4 teaspoon freshly ground black pepper
2 tablespoons sesame seeds, toasted and crushed

Method

  1. Heat the vegetable and sesame oils in a large saucepan over medium heat. Add the onion, steak and mushroom and stir-fry for 2 minutes, then add the rice and stir-fry for a further 1 minute. Add all of the remaining ingredients and 750 ml hot water and bring to the boil, then reduce the heat to low, cover, and cook for 20 minutes — do not lift the lid or stir during this time. Serve hot with pickles or vegetable dishes.
