Ingredients

Quantity Ingredient
2 telegraph cucumber, peeled and thinly sliced
3 teaspoons coarse salt
2 tablespoons rice vinegar or mild white vinegar
1 teaspoon sugar
1/4 teaspoon cayenne pepper
1 garlic clove, finely chopped
1 spring onion, finely chopped
3 teaspoons sesame seeds, toasted and crushed

Method

  1. Put the cucumber into a bowl, sprinkle with the salt and add 250 ml water. Leave to soak for 15 minutes, then drain well.
  2. In a bowl, combine all of the other ingredients, pour over the cucumbers, mix well and serve chilled.
